coffee on sand

?In Jordan, people make coffee out of sand. Here is How.

This method?can also be used to make Turkish coffee.

According to a New York Times article from 15 years ago on the sand method, the sand ?is heated by a burner underneath rather than by the sun.?

A Greek copper coffeepot, a briki, which has an hourglass shape and a long handle, is filled partway with ground coffee.

Then water and, often, sugar and set into the hot sand until the mixture begins to boil, about a minute.

The pot is lifted out of the sand, stirred to settle the coffee, and embedded again in the sand. The coffee is allowed to come to a boil twice more, it said.
